Thai Mango Sticky rice is one of the well-known desserts in Thailand, especially during summertime. It is recommended Thai dessert for you to try once with the taste of sweet and salty of sticky rice mixed with sweet mango.
Ingredients
Coconut milk Sticky Rice:
2 Cups of Thai sticky rice
2 Cups of Water
1 1/2 cups of Coconut milk
1 Cup of Sugar
1/4 teaspoon salt
1 Padan leaf
Topping:
1 to 2 ripe mangoes
1 cup of Coconut milk
1/4 cup of sugar
1/4 teaspoon salt
1 teaspoon tapioca flour
Preparation:
Coconut milk Sticky Rice :
Soak the sticky rice with water for 1 - 3 hours
Pour the sticky rice on the cheesecloth or muslin cloth.
Cover the sticky rice with cheesecloth or muslin cloth and steam the rice for 20 - 30 minutes
Heat the coconut milk in the pot over medium heat.
Add Sugar, Salt, Pandan leaf, and steamed sticky rice.
After it's cooked, cover the sticky coconut rice with cheesecloth or muslin cloth.
Coconut milk topping :
Heat the coconut milk with sugar, salt, and tapioca flour together.
Place the sticky rice on a serving dish. Arrange the mangos next to the sticky rice. Pour the sauce over the mangos and rice. Sprinkle with sesame seeds.
